The Black Vineyard: A Culinary Ascent of Mount Etna with Chef Walter

The Stage: A Landscape of Creation and Destruction

Here, the ground beneath your feet is not dirt, but sciara—volcanic  ash and frozen lava flows. The air is tinged with the scent of sulfur  and lemon groves. You will stand in vineyards planted on precipitous,  black-stone terraces, looking down upon a turquoise sea, with plumes of  steam rising from the mighty crater above. This is a place of dramatic  contrast, where life thrives in the face of raw power, and the energy is  palpable.


The Wine: Blood of the Volcano

On  the slopes of Etna, wine is not merely made; it is forged. Chef Walter  guides you into the heart of a viticultural revolution, where "heroic  winemakers" cultivate some of the world's most distinctive and  sought-after bottles.

  • The Red: Nerello Mascalese. You will taste the elegant, ethereal heart of the volcano: Nerello Mascalese.  This grape produces wines of stunning complexity—with the translucent  color of a Burgundy, but with the smoky, mineral soul of Etna. It  whispers of wild strawberries, rose petals, and cool, high-altitude ash.
  • The White: Carricante. You will discover the brilliant, age-worthy whites from the Carricante grape.
