The Premise: Uncovering a Lost World

Before the stunning pietra leccese facades of Lecce were carved, the city was a vibrant center of Jewish  life. For centuries, a prosperous community lived, worked, and worshiped  in the Giudecca, their presence  woven into the very fabric of the region. Then, with the Edict of  Expulsion in 1541, their world vanished from public record—but not  without a trace.

Chef  Walter, a historian of the palate, has dedicated years to researching  this forgotten heritage. "The recipes are the records," he says. "They  are the artifacts that were carried in memory and adapted in secret  kitchens. To cook this food is to read a history that was never written  down."

The Itinerary: A Tapestry of Tastes and Tales

Our journey begins in the heart of Lecce's Giudecca.  We will not see a grand synagogue; it was dismantled and built over.  Instead, Walter guides you through a labyrinth of narrow lanes, pointing  out the subtle clues: a Hebrew inscription hidden on a windowsill, the  unique layout of a courtyard, a doorframe that once held a mezuzah. He tells the stories of the merchants, scholars, and doctors who walked these same streets.

The Flavors of Memory: A Culinary Resurrection

The  heart of the experience takes place in a restored ancient palace, where  Chef Walter has prepared a culinary workshop based on his research.  Here, we will cook and taste the "cucina ebraica salentina," a cuisine  of adaptation, symbolism, and deep flavor.


  • The Bread of Affliction & The Bread of Celebration: We will bake two iconic breads: Pane Azzimo (unleavened bread), but also explore how the local durum wheat was used  to create unique Sabbath loaves that influenced the region's famed  bread culture.
  • The "Pizzata" and the Art of Frying: We will craft the Pizzata,  a legendary Jewish-Salentine dish of fried dough discs topped with  tomatoes, capers, and oregano—a possible ancestor to the modern pizza.  We'll explore the Jewish tradition of frying in olive oil, which left an  indelible mark on Southern Italian cuisine.
  • A "Giudecca" Garden: We will handle vegetables central to the Jewish Mediterranean diet: eggplant, cicoria (chicory), and pumpkin. Walter will demonstrate how these were transformed into exquisite, often sweet-and-sour dishes like "Pignata Maritata" (a slow-cooked vegetable and meat stew) with roots in Sabbath traditions.
  • The Sweetness of Resilience: No meal is complete without dessert. We will shape Purcidduzzi, honey-soaked fried dough balls reminiscent of struffoli but with a distinct history, and taste the almond-based Cubbaita (a type of torrone), a direct legacy of the Jewish confectioners who once dominated the trade.

Each course is paired with the robust, sun-drenched wines of Salento. We will sip the powerful Negroamaro and the elegant Primitivo,  discussing how the kosher laws of the time would have influenced wine  production and trade, and toasting to the resilience of a culture that  helped shape this land.
